Chocolate Peanut Butter Energy Balls
We are switching it up today! Okay, guys, to be honest, I have been wanting to post a recipe for the longest time, but every time I scroll through Pinterest and see the amazing food bloggers out there, I feel unworthy.
...Buuutttt TODAY is the day! While in Quarantine, I have been sitting here on my computer for maybe 8 hours a day doing homework assignments. Don't get me wrong, I am happy to adapt, but dear professors, my brain is sludge. My brain needs fuel much like my body needs fuel. After all, thinking is an exercise for the brain!

So, my favorite snack to munch on are Chocolate Peanut Butter Energy Balls which give me the perfect sweet fix and make for excellent brain food. Full disclaimer, this recipe is not going to be perfect. I am not typically one to follow a recipe or precisely measure. My method of "measuring" is "eh, that looks good." But I will make this promise: ANYONE can make these--
even if you are prone to burn water.
So here we go. You'll need:
+ 1 cup rolled oats
+ 1/2 cup of peanut butter
+ 1/4 cup of honey
+ tbsp of chia seeds
+ 1/2 cup of mini chocolate chips (This is were the "eh, that looks good" comes in)

Start with a medium mixing bowl. Add your oats, peanut butter, honey, chia seeds, and chocolate chips. Mix until combined. (Sometimes you might need to get in there with your hands).

Once combined, scoop a spoon full of mixture and form into a ball with your hands. To give you an idea of the size of the ball, make an "OK" sign with your hand. You can always go bigger or smaller if you would like. None of my energy balls every look the same! We are not going for perfect, we are going for tasty.
Place in a sealed container and refrigerate. After about two hours, the balls should be set and ready to snack! But, you can also store in the refrigerator for up to two weeks.
